During the early Ming Dynasty, ordinary people loved to eat Nanjing cured duck, and so did the emperor. It is said that Zhu Yuanzhang, the founder of the Ming Dynasty,"ate a roast duck in a solar eclipse." The royal chefs in the court tried every means to develop new ways to eat duck dishes to please the Lord, so they also developed two kinds of roasted pork roast duck and braised roast duck. The roast pork roast duck is represented by "Quanjude", while the braised roast duck is most famous for "Bianyifang".
Quanjude adopts the hanging stove roasting method and does not cut open ducks. Just make a small hole in the duck's body, take out the internal organs, then fill the duck's stomach with boiling water, then tie the small hole and hang it on the fire to roast it. This method not only prevents the duck from losing water due to being roasted, but also allows the duck skin to expand without being roasted soft. The roasted duck skin is very thin and crisp, making it the best part of the roast duck. The hanging stove has holes but no door. Fruit trees such as jujube wood and pear wood are used as fuel and open fire is used. When the fruit wood is fired, it is smoke-free, has a strong primer, and has a long burning time. The roasted ducks have a full appearance, a date red color, crispy skin, tender burnt outside and tender inside, and have a fragrance of fruit wood. When tasted carefully, the taste is even more wonderful. Strictly speaking, the only roasting method is called Beijing Roast Duck.
Bianyifang's "stewing furnace" method is actually a kind of underground furnace. The furnace body is made of bricks and is about one meter square in size. Its production method was first introduced to Beijing from the south. It is characterized by "ducks cannot see open flames". It is made by braising over charcoal fire in the stove and hot stove walls. Due to the need for dark fire, high technology is required. The stove owner must control the temperature in the stove. If the temperature is too high, the ducks will be burnt, and otherwise, they will not be cooked. The stewed roast duck has bright and crisp skin, white and tender meat, and delicious taste. The roast duck in the stewed stove is the signature of Yiyi Fang, but the stewed stove for burning straw has long been changed into an electric stewed stove. Nowadays, few roast duck restaurants use stewing stoves, and most roast duck restaurants use the Quanjude hanging stove roasting method. The stewed roast duck tastes more tender, and the juice of the duck skin is obviously more plump. The fruit and wood fragrance of the hanging roast duck seems to allow the human body to understand the wisdom of the "roasting" cooking method that humans first mastered.
Dadong Roast Duck Restaurant (slightly less famous than the above two, but it is also very delicious), diagonally opposite the Beijing-Guangzhou Center, the dishes are very particular. It is really baked with apple wood, and the taste and taste are beyond question.
Here are three ways to eat Beijing Roast Duck:
The first way to eat: It is said that it was developed by the ladies in the big house gate. They don't eat onions or garlic, but they like to dip the crisp and crispy duck skin in thin white sugar to eat it. After that, when Quanjude's waiter saw a female guest coming, he would follow the roast duck and serve a small plate of white sugar.
The second way to eat it: Sweet flour sauce with onion strips, which can be paired with cucumber strips and radish strips. Use chopsticks to pick up a little sweet flour sauce, spread it on the lotus leaf cake, put a few slices of roast duck on top, and then put a few onion strips, cucumber strips or radish strips, roll up the lotus leaf cake, it is really delicious.
The third way to eat it: mashed garlic with sweet flour sauce, or with radish strips, etc. Eating duck meat with lotus leaf cake was also a popular seasoning in the early years. Mashed garlic can relieve grease. Dip the slices of roast duck into mashed garlic and sweet flour sauce to add a hint of spiciness to the freshness and make the flavor more unique. Many customers particularly prefer this seasoning.
There are two types of Bianyifang Roast Duck, 1416 is the original flavor, and the other has the flavor of flowers. Since you are here, you should eat the signature. The reason why it is called 1416 is because Bianyifang started its business in the 14th year of Yongle in the Ming Dynasty, that is, in 1416 AD. This is half a roast duck. It looks rare. Half a roast duck does not contain side dishes such as cakes, sauce, and onions. It needs to be purchased extra. If you buy the whole one, you will have side dishes and a duck rack.
Let's talk about the taste. Unlike Shanghai, many restaurants in Shanghai only put duck skin slices on them to make cakes. The skin slices of Beijing roast duck come with meat on them, so they won't feel too greasy. They will be very delicious when eaten alone. The duck skin is crispy, not as thin as potato chips. Please pay attention to the word "crisp". It feels like a solid crispy feeling when biting on the lard residue, but it is not greasy. You can obviously feel the aroma brought by the duck skin in your mouth. The meat is very tender and the cake skin is very thin. You must eat it while it is hot. You can feel the crispy, tender, soft and waxy taste, coupled with the refreshing of cucumber, the rushing taste of Beijing onions, the rich sauce, and the happiness. Bursting! Absolutely extraordinary!
Mustard duck's feet, made from boneless duck's feet and mustard and other seasonings. It's not mustard sauce, but mustard powder. The taste is not as strong as mustard sauce, but relatively soft. The duck's feet are handled very well. There is no weird "athlete's foot" taste. O(∩_∩)O~
The three people at the next table entered the restaurant without looking at the menu. Lama Temple
Yonghegong was the highest standard Buddhist temple in the country in the middle and late Qing Dynasty. When Yongzheng died in the 13th year of Yongzheng, the coffin was parked here. Therefore, the original green glazed tiles of the main hall of Yonghe Palace were changed to yellow glazed tiles. Because Emperor Qianlong was born here, Yonghe Palace had two emperors and became a "dragon hidden land". There are many and beautiful Buddha statues and Thangkas in Lama Temple, so you can pay attention to them.
The most interesting thing was that when I was getting out of the subway, I met Marie, a Danish student, who was traveling and couldn't find the Lama Temple. It happened that I also came to the map to figure out the route, so the two of them had a pleasant tour together.
