Local old hotpot

There are many restaurants that focus on sentimentality, with more emphasis on affectation and less on painlessness. Local hotpot is keeping up with the times. If there is any place to experience the most authentic Chongqing Jiugongge hotpot, local old hotpot is undoubtedly my first choice. The traditional Chinese hotpot is to Chongqing what the old Changsha lobster restaurant is to Changsha, the famous Nanjing food stalls are to Nanjing, and the Changan food stalls are to Xi'an. The waiter spoke authentic Chongqing dialect and immediately pulled you into the world of hotpot. The reason why it is called "local goods" is that its fresh local dishes are the most famous. Food is expensive for freshness, and hot pot is rare for local dishes.

The hotpot restaurant is located right next to Hongyadong, a five minute walk away. The overall design is mainly white, incorporating elements of Chongqing's urban environment. The open cooking space allows customers to directly observe the process of side dishes, ensuring cleanliness and hygiene. The desktop is lined with small square tiles, which is very interesting. The interior space of the store is very large, and the seats by the window can also enjoy the night view. The store is already fully booked by around 5 pm.

The service in the entire restaurant is also very good. Waiters will take the initiative to help you with the dishes, and if you see someone going to eat, they will chat with you about daily life. It's even better to go to the toilet. There are all kinds of toiletries, as well as famous perfume, mouthwash, etc. You can use these to remove the taste of hot pot after eating hot pot.

I ordered the most classic nine grid pot bottom. The boiling red soup bottom has a spicy and rich flavor, while the rich butter constantly triggers appetite expansion. The combination of chili and Sichuan peppercorns creates a unique and mellow aroma of hot pot.

The seasonings here are all self selected. As the most authentic Chongqing base, you can try "sesame oil+oyster sauce+vinegar+garlic paste+coriander+millet chili", which is my favorite flavor and highly recommended.

Butcher's fresh tripe: a must-have dish here, it's crispy and spicy when cooked for nine seconds. Transported directly from the slaughterhouse, freshly eaten.

Handmade Fish Seed Shrimp Slippery: Paired with Shrimp Slippery, the fish seeds are tender yet still have a grainy texture, providing a refreshing and chewy taste.

Eight braised dishes: There are many dishes of braised dishes, such as chicken feet, sausages, pig trotters, etc., all of which are good choices.

Fresh Pig Yellow Throat: Boil Yellow Throat in the pot for 15 seconds and it will be ready to serve. It is crispy and has a better spicy taste.

Australian beef: The red and white texture is really beautiful, and the rosy color indicates excellent quality. It can be shaken in a boiling pot for a few seconds, with a soft taste and a spicy flavor with a hint of milk aroma. It is accompanied by garlic paste and sesame oil, and the aftertaste is endless. It is a must order for hot pot.

Handmade Chao Shou: Cooking Chao Shou in hotpot is also a brand new experience, which reminds me of Chengdu's red oil Chao Shou, where one Chao Shou is wrapped in a large fresh shrimp.

Mud eel and mud loach: They are both freshly killed and cooked, and the mud loach brought up will still move even after its head is removed. Each one has a very large head; Eels have already undergone bone removal treatment. The taste is smooth and delicate, and once bitten, it feels like fresh meat.

Bowl of fresh duck blood: When served on the table, it is visibly fresh, and when boiled in red oil, it can be eaten, tender and smooth.

Rongchang Earth Goose Intestine and Earth Pork: Both are made from fresh ingredients, showcasing their freshness, naturalness, and greenness. Their taste is also stunning, and you can feel their freshness with just one bite.

It has to be said that the food here is still very delicious, which greatly reflects the freshness of the "earth". However, the quantity of each serving is not particularly large, and if someone has a big appetite, they may feel that it is not enough to eat, and the per capita price will also increase.

This is an authentic hotpot restaurant hidden in the alley, often requiring waiting. As the saying goes, 'the aroma of wine is not afraid of the depth of the alley', it is perfect for use here. Before going there, I thought the name "Boiled Youth" was a bit strange, but later I realized that it has a lot of meaning. The store is filled with nostalgic old items, such as cups on the table, cassette tapes, picture books, etc. There is always one item that can evoke memories of your youth.

To enjoy this hotpot, you must walk into a small alley, which is not particularly conspicuous. The overall style is also nostalgic and retro, with a small storefront, but the yellow lighting inside is particularly charming, instantly bringing back memories of youth. The position by the window is very romantic, coupled with vintage music. Eating hotpot and taking very artistic photos is really great.

On the whole, the service was standard, the waiters served the dishes very warmly, and they prepared aprons, perfume and mouthwash in the bathroom.

Moreover, ice cream noodles are available in unlimited quantities for free, making it very refreshing to have a bowl of hot pot after eating;

Cloud based tripe: The amount of tripe is very large and very crispy. It can be eaten after a few seconds of boiling in the pot. It's really delicious when dipped in dipping sauce;

Xian Qi Goose Intestine: When it comes up, there is really a "Xian Qi" floating around, and the goose intestines in the clouds and mist appear particularly pink and tender, very refreshing and tender;

Handmade Shrimp Slippery: Shrimp Slippery is very fresh, decorated with fish roe, and the waiter will help to cook it;

Recently, I heard from a friend in Chongqing that there is a saying circulating on the streets of Chongqing that goes, 'If you don't have a crispy belly, the boss will refund you.'. Mao Du can be said to be the signature dish of many Chongqing hotpot restaurants. A good Mao Du can be sold for over a hundred yuan. How could someone say such a big thing with such a big breath? Is it really 'I don't know the height of the sky and the depth of the earth'? With all kinds of curiosity and doubts, you must also come to this Dongzi Li Mao Du hotpot to have a meal.

The storefront is very large, with a bright, refreshing, and tidy overall environment, mainly in bright yellow color. Before approaching, you can see the eye-catching slogan "Don't be crispy, the boss guarantees a refund". As soon as I entered the door, I was greeted by buckets of various fruits and vegetables with the words' Don't waste, take whatever you want 'written on them. There were even dozens of pounds of large watermelons, which was really shocking. The same open kitchen allows you to see the entire process of ingredients being served, clean and hygienic.

From the welcome fruits served before the meal to the attentive service throughout, the little brothers here calmly respond with the most sunny smiles. Especially when it comes to topping the tripe, the entire plating process is presented in front of us, which is really shocking and adds a touch of freshness to the diners who come to eat. I'm sure everyone has tried hotpot before, and I've had more than one plate of tripe, but this way of eating is probably the first time.

Dongzi Li Zhaopai tripe: As the flagship dish in the store, this dish has to be ordered. Fresh tripe slaughtered daily in the slaughterhouse is transported to the store within 3 hours in ice water below 4 degrees Celsius. As long as you order this dish and bring it to the table with an ice tray, tear and heat it immediately, soak it in carefully selected soda water, and preserve the original flavor of the tripe to the greatest extent possible. We will also provide you with specially mixed sesame oil and garlic paste to ensure the most pleasant taste for your tripe. This time it's not just a tripe, but also a Chongqing hotpot culture.

Chef Dongzi Li's Lion Head: There are four lion heads in one order, all of which are very large and handmade. They are also wrapped in salted egg yolks. Besides having steamed lion's head in Yangzhou, this is the first time I have cooked lion's head in a spicy pot. Fat but not greasy, the yolk inside adds a soft and fluffy texture, it's really irresistible.

Braised platter: Everyone can try the eight braised dishes in the store. If you're afraid of too much, you can order a small portion and make sure to eat it while it's hot. If it cools down, you can boil it in the pot and then take it out to eat.

Shrimp Slippery: The irregular shrimp powder tells us that this is the result of manual pounding. Fresh shrimp meat is cooked in the pot and has a delicate texture when tasted.

Tender Beef: Freshly sliced beef is served, with a uniform thickness and a very tender and smooth texture.

County liver and small waist: After being specially marinated by the chef, they are served with a powdery texture and can be eaten as soon as they are cooked in a pot. They are very tender.

Vegetables: I ordered several fresh vegetables, and after finishing the meat, I had a few bites of green vegetables to relieve greasiness.

Staying in Yuzhong

For the convenience of travel in Chongqing this time, I booked a homestay near Hongyadong on Tujia. At first glance, it was because it was located on a high floor and could overlook the entire river view. Moving in did not disappoint me.

Nestled above the clouds, overlooking the entire city skyline, the white of Santorini and the gray of Tuscany shine together in this space, just for this pure texture.

The homestay booked on Tujia has a pleasant name called Yunqi. The layout consists of two bedrooms, two living rooms, one kitchen, and one bathroom. All rooms (living room, two bedrooms) have unobstructed 180 degree and 270 degree river views. The floor is located on the 28th floor, at the top of the mountains in the central area of Chongqing. The large floor to ceiling glass windows overlook many landmark buildings in Chongqing, and the magnificent river water creates an unbeatable view of the river and night scenes.

Not only is the location out of print, but the entire design adopts Greek caves, with a minimalist design of curved round windows, and each room is particularly large. The master bedroom has a 270 degree river view, and we have installed a bathtub next to the glass curtain wall. You can lie in the bathtub and enjoy the night view of the mountain city.

The second bedroom has a 180 degree river view bay window with a width of 8 meters. Sitting next to the bay window and having breakfast is also a wonderful enjoyment.

In the living room, next to the 180 degree river view floor to ceiling glass curtain wall, there is a Danish designer airplane chair (which feels so good that you must sit here for tea, I love it!) and is also equipped with a 120 inch giant screen projection curtain wall, providing excellent audio-visual effects.

The living room has two extra long sofa beds (about 4 meters), where you can lazily lie down and sleep while looking at the trees. If a large family or friends travel together, this place is completely satisfying.

The kitchen and bathroom are fully equipped with facilities and a complete set of kitchenware. Friends who are willing to do it themselves can buy some ingredients to process. The bathroom is also thoughtfully equipped with disposable toiletries, comfortable slippers, hair dryers, cotton swabs, and bathrobes.

Tujia's "Yunqi" is located at the excellent core of Linjiangmen, Monument to the people's Liberation, Chongqing. All major online celebrity restaurants are two steps down the stairs. There are all kinds of traditional Chongqing snacks around, such as hot and sour noodles, spicy string, Dandan noodles, Ciba rice dumpling, Wang Yazi, etc. You can't taste them for ten days and a half months.

The apartment is only a few minutes' walk from Linjiangmen Station of No. 2 track, and many popular scenic spots such as Monument to the people's Liberation/Hongya Cave/Yangtze River Cableway/Qiansimen Bridge/Riyueguang Square are within 0-2km (you can basically walk there.). It is also very convenient to take rail transportation to areas outside Monument to the people's Liberation.
