Kuza is pounded together with raw pork mashed, leeks, coriander and other seasonings, as well as semi-digested green bitter juice from beef intestines. It should be beef flour that you can also eat in Guizhou. Before eating, use Shuan spicy food to swim around in the soup and use it as dipping sauce for rice noodles. It may seem to have a strong taste, but behind the bitter taste is actually the fragrance of grass, just like the smell of a well-trimmed, wet lawn that had just rained in the morning. The flavors of herbs and spices such as coriander and leeks will also collide with each other in the mouth. Probably because Dehong is hot and humid, eating bitter salad will also have the effect of dispelling heat. Dehong's food is like this. He is good at playing with various spices, herbs and ingredients with unique smells, and can resolve the heavy taste ingredients just right. There is also a vendor selling pickled fruits at the entrance of Best Food City. It sells green plum, pineapple, pear and sour papaya marinated with pickled peppers. When eating, they even carry chili seeds and white sugar. Sour papaya is particularly impressive. The acidity of the fruit itself, the sour and spicy nature of the marinade, the spicy nature of the chili and the sweetness of the white sugar are sawing each other in the mouth. At the end of chewing, there is a kind of sweetness similar to licorice.
