Christmas

November, when the aroma of Christmas is strongest every year,

I spend almost all my time wandering abroad,

Foreigners also go to markets during the Spring Festival.

We are called Nian City,

They call it the Christmas Market.

t wander around,

Otherwise you will drool on the floor.

Last week in Copenhagen, an old socialist revolutionary base area about 7500 kilometers away from Shanghai, China, I licked the Christmas market in Denmark, a fairy tale kingdom. The blind beauty brought by distance is more exciting than our southern children seeing heavy snow.

At this time, the core commercial streets of Copenhagen are all dreamy, with red loving lights strung between the buildings, like pairs of arms of lovers. The whole street has a poetic name called "Sweet Street". When I said this, I swallowed.

How surreal it is there! I saw the street scene of "Andersen Fairy Tales" that my mother read to me when I was a child, and the miniature Barbie doll villa about 1 meter high that my father bought me. They were right in front of me.

There are many immigrants in Denmark. Perhaps due to the good welfare of the government, even ordinary canteens serve organic ingredients for lunch. When I got up early in the morning, I ate four different varieties of tomatoes in the restaurant's breakfast buffet, which many Michelins couldn't do.

This season, walking around the streets makes me even more obsessed. It is not an adult carnival with lavish lights, but a sense of happiness that a fairy tale kingdom should have, natural and innocent. As I wandered inside, the bears and the golden stars in the ice and snow would laugh.

However, the temperature in Copenhagen is hotter than in the original Christmas story, and I wonder if Santa and the elk will complain. In order to make the Christmas atmosphere more dreamy, Danish buildings are deliberately decorated with fake snow. I think we can learn from southern China. If we can't grow old, we can paint ourselves.

The people here are very friendly. When I pass by every Christmas market stall, the owner will stick his head out and say hello to me. They all come from different countries.

The French boss thinks the milk source for making cheese here is good, and the Italian boss likes the wheat used to make noodles here. Each has its own reasons to love Copenhagen. The taste of ginger is integrated into various Christmas foods without borders, from candy, bread to tea. I can honestly taste this from the variety of red-green tongue-toned joys in the Christmas market.

There is also a gossip. Women in Copenhagen have a fierce temperament. They ride bicycles with high-legged and fine-wheeled wheels like an iron lady, leaving men far behind. Therefore, Copenhagen men prefer to marry Thai girls, who are quiet and love to read. Because the Thai girl is still taking the Danish exam, she has no time to get angry with her cowardly and uncaring husband for the time being.

Pay close attention to the tea here. Most of it is organic. I can drink many taste imprints from Southeast Asia, such as spicy CHAI (Thai "tea").

In fact, Nordic people also love afternoon tea. On this point, I have talked to friends in Europe and domestic tea friends: European tea culture actually comes from China. The Chinese created black tea.

But why is black tea not consumed in China, but in the West? Because people have had the industrial revolution and need afternoon tea to refresh themselves, relieve fatigue, and then improve immunity, people in the province are concentrated in cities to get the plague. Our aristocrats still use tea as a luxury and cannot popularize it.

However, unlike China's habits, Europeans prefer blended organic teas with the mark of poverty.

Westerners have a history of drinking tea for hundreds of years. There are two main ways: breakfast tea and afternoon tea. Black tea is not enough to digest digestion after a meal, but is used for people to warm their stomachs and refresh themselves when they are semi-hungry, especially at breakfast, and to be paired with bread and snacks.
At the Christmas market, I bought a lot of snacks, most of which had the flavor of ginger, licorice and chocolate, and used them to make snacks.

As we all know, Westerners have dinner after 8-9 o'clock, so after the Industrial Revolution, Westerners called lunch brunch, which was relatively sloppy and short, and the interval between dinners was long. Based on this post-Industrial Revolution living environment came into being. Afternoon tea. Unfortunately, no lifestyle is created for fashion and romance. Only what is squeezed out of living space lasts. Afternoon tea for Westerners was to relieve hunger. At that time, the tea break for the civilian class was used to replenish workers 'energy.

Therefore, although black tea was invented by the Chinese, it is really due to the environment in the West.

After drinking is solved, tea must be matched with food to truly solve hunger. Global culture is open. Western afternoon tea collocation and Chinese time wisdom can be used for reference. Chinese date cake, cheese and Pu 'er are a perfect match, and European cinnamon rolls and ginger-flavored organic tea are a natural match.

Regarding afternoon tea matching, Chinese tea is actually more challenging. "Chinese people are very happy and have hundreds of experiences to learn from. Hangzhou people and Jiangnan people drink green tea and eat rice flour foods. People who have learned tea knowledge know that Longjing tea has the aroma of chestnut and brown rice. Go after this idea to make it, make some rice flour foods, and it will definitely not be incompatible with green tea. Therefore, the cakes just mentioned, orange cakes, peach crisp Tangxi things are all compatible with green tea." said tea artist Pang.

This combination is also to control the astringency of the tea and keep the tea fresh. In fact, because Chinese tea tastes delicate and elegant and is expensive, pairing with refreshments will be a little complicated.

Speaking of which, among Europeans, Chinese and Japanese, the mixed tea drunk by Europeans is the most suitable for pairing various desserts. When making tea, Japan is reluctant to sacrifice what is effective. It is keen on the deep processing of tea and makes the best use of a piece of tea from beginning to end. Therefore, the overall water-killing degree of Japanese tea is relatively low, and both fried tea and matcha are steamed green. The low temperature causes some irritants to not go away completely.

Japanese people fry tea ceremony and matcha ceremony. Go visit his tea ceremony. First, they will give you a sweet fruit tea and then drink tea, because Japanese tea is very irritating. Therefore, the fruit of peace should be oil and sweet. In Japan, I prefer European afternoon tea trays. The unique and complex aroma eliminates the burden of a single sweetness.

People who start drinking tea often feel uncomfortable to their stomachs. Another way to balance their "strength" is to add milk. Pure milk is added to Zhengshan Seed. The milk flowers contain tea polyphenols and caffeine, making the tea soup mellow, sweet and silky.

This coincides with afternoon tea in Europe. In fact, the custom of adding milk in Europe a hundred years ago came from here.

I don't know if you have noticed, but the fruit plate is usually not available for afternoon tea in Europe. If you eat after-meal fruit, no matter how sweet the Chinese late sweet throat tea is, no matter how sweet it is, it is not as sweet as fructose. If you eat grapes or oranges, the fruit acid in it will mobilize the astringent taste of the tea. You can eat fruit after drinking it, or eat fruit first, but not at the same time.

With these thoughts, I returned home from Copenhagen and flew 7500 kilometers. I found that it was another Christmas market! There, the Paddington Bear from England was looking up at me.

During afternoon tea last weekend, my mother-in-law found fans ranging from 8 months to 80 years old to listen to me chatter about my century-old afternoon leisure time in Britain.

The aroma of coffee and biscuits overflows in the Paddington Bear Exhibition Area in Shanghai Century Plaza. The gossip of the British royal family begins, runs through the history of high tea and low tea, and then reaches the interpretation and matching of the three-layer plate. Anyway, everyone, big and small, is full of food.
