This is the second time I have come to Yongxing Square. I stayed at a nearby hotel when I first came here and visited twice in the evening. The first impression is that there are too many tourists in Yongxing Square. The second is that they are dazzled by the delicious food. When people with difficulty choosing come, they really don't know which to eat. I had a quick look at Yongxing Square that time and knew that this place was due to the popular "bowl of wine" in the square that was popular all over the country. I didn't drink or experience the wine, but I felt the popularity and charm of Yongxingfang.

The second recent trip to Yongxingfang is different from the last time. It was to participate in the "intangible cultural heritage" experience in Xi'an and explore the many Shaanxi intangible culture and delicacies hidden in Yongxingfang. With the leadership of local people and the theme experience, this time I have an in-depth understanding of Yongxing Square.

It turns out that Yongxing Square behind the excitement covers an area of 15 acres of square inch land with a length of 130 meters from east to west and a width of 88 meters from north to south. It actually contains more than 40 "intangible cultural heritage" in 107 districts and counties in 11 places in Shaanxi. Every taste, every piece of antique has a story or legend, many of which have a history of hundreds of years.

In Xi'an, the most common character is probably seen, but this complex word can also be seen everywhere in Yongxingfang.

This foreigner can't understand, read, or write, but Shaanxi people talk about it. What they can't do without every day is a Shaanxi specialty food. Locals read it "biang". This is a favorite pasta dish of people in Guanzhong, Shaanxi Province. An old saying popular in the local area is called "Youpo spicy biangbiang noodles". It seems that this word has become the endorsement of Shaanxi cuisine.

Last time I came to Yongxing Square, I didn't notice that there was also an "intangible cultural heritage" cultural district here. This time, I want to have a good stroll.

The New Year is coming, and the folk customs in the neighborhood are getting more and more New Year flavor.

Before walking into Yongxing Square, it is necessary to first understand what Yongxing Square is. In Xi'an, for foreign tourists, the most well-known check-in place is Huimin Street, followed by Yongxingfang. I experience that the price of Yongxing Square is more considerate, which tourists can accept. You can eat a variety of specialty delicacies for 3-50 yuan. However, due to the relatively large block area of Huimin Street, the choice is wider, but the price is not beautiful.

Yongxingfang is located at the middle gate of Xi'an City Wall, and on one side is the ancient city wall of Xi'an. The area is not large, but more than 1400 years ago, Wei Zheng, a well-known remonstrant of the Tang Dynasty in Chinese history, lived here, which adds a sense of history to the place.

Wei Zheng, a politician, thinker, litterateur and historian of the Tang Dynasty, was born in 580 AD, with the word Xuancheng. Because of his outspoken remonstrance, he assisted Emperor Taizong of the Tang Dynasty to jointly create the great cause of "Zhenguan Rule" and was later called the "famous prime minister of the generation".

It is precisely for this reason that Yongxing Square makes full use of the style and thousand-year cultural heritage of "Tangcheng 108 Square" to develop this place into a comprehensive area integrating folk leisure, sightseeing, food experience, intangible cultural heritage food museum, etc. block. After several years of development, today's Yongxingfang has become another characteristic tourist business card for Xi'an tourism.

The highlight of Yongxing Square is that it condenses more than 40 "intangible cultural heritage" in Shaanxi, gathers all these century-old brands together, allowing tourists to visit them all in one stop. To use locals, in Yongxing Square, every food you eat and every item you pick up in your hands is culture.

Some people are concerned about whether the once popular Yongxing Square is still popular. I can definitely tell you that there are still many tourists, and people are constantly queuing up to experience it. Everyone must come here once in their lives, but a bowl of rice wine for 5 yuan is still acceptable. It's a pity to get a card and take a photo.

There are too many delicious and fun things in Yongxing Square. It is a long process to finish all of them. Here are just four typical things that feel good. If you have the opportunity to come to Yongxing Square, you can follow the author's camera to have a good meal.

1. The "intangible cultural heritage" of southern Shaanxi cuisine: Hanyin white flint rice boiling soup

As the cradle of Chinese national culture and an important birthplace of Chinese cooking technology, Shaanxi has bred the ancient cuisine-Shaanxi cuisine. The cooking skills of Baihuishang from Hanyin come from the ancient stone cooking culture.

"Stone cooking" is a primitive cooking method in ancient China, and its history can be traced back to the Paleolithic Age. It is a cooking method that uses stone slabs and pebbles as cookware and indirectly uses the heat of fire to cook food.

In the Compendium of Materia Medica, the scientific name of white flint is called Baishi Zhi. This texture of stone is divided into five colors and five flavors, which are in line with the five elements of the Yellow Emperor's Internal Classic of Medicine. After being eaten, it can moisten the stomach, generate body fluid, replenish kidney qi, and relieve heat.

One thing is that before adding white flint, all the ingredients inside were raw.

The method of making white flint boiling soup is to place the ingredients in a bowl, cover it with gauze, pour it with water, and then put the red-hot white river pebbles into the stock for boiling. It is said that this soup can not only tonic, but also dispel heart fire, treat toothache, relieve pharyngitis and oral inflammation.

At the scene, Master Shen Lanpin, as the inheritor of the intangible cultural heritage of Shaanxi Province, performed for everyone to personally see how the ingredients in the pot were cooked.

The predecessor of this food was the dietotherapy earthworks passed down by the Shen family in Hanyin for more than 500 years. Now it is inherited and included in the Intangible Cultural Heritage List of Shaanxi Province. Tourists can see and drink it every day in Yongxingfang Intangible Cultural Heritage Food Street.

2. Zichang Pancakes

If the bowl of wine brought popularity to Yongxingfang once became the most popular place, there is also a more popular restaurant in Yongxingfang, which is Zichang Pancakes. Among the tourists surrounded by layers, they spotted Shaanxi people wearing white clothes, wrapped in white turbans and sitting cross-legged on the kang with a long large cigarette bag in their mouths. A strong northern Shaanxi wind came.

Zichang Pancakes are a famous traditional snack in Zichang County, Shaanxi Province. The cakes are as thin as paper, rolled and dipped in peppers. They are soft, glutinous, tender, and delicious.

I admit that I was attracted by this place because of the traditional cultural style here. Then, what I saw was the dexterous pancake movements of the uncles and aunties dressed in green clothes flying up and down, left and right between their fingertips, which was simply superb.

Hebei eats pancakes, Shandong people eat pancakes, but Shaanxi people have their own unique way of eating pancakes. It is said that Zichang pancakes began to be made as early as the late Yuan and early Ming Dynasties, and have a history of more than 600 years.

But what tourists can't understand is why all the pancakes on the stalls are retired uncles and aunts dressed in green clothes. It turns out that these pancakes and green have a constant parting plot.

The old owner introduced that in the past, Zichang pancakes were mainly used for military marching and combat, but were only introduced to the people and became folk snacks in the Qing Dynasty. Today's Zichang Pancakes are made to wear green clothes to operate them in order to give tourists a sense of travel.

The way Zichang pancakes are eaten is also different from those in Hebei and Shandong. A transparent pancake as thin as paper, filled with shredded potatoes, etc., as well as various meats, dipped in spicy pepper that Shaanxi people can't live without. It's called fragrant. This was the first time I tasted it at his house on this trip. I didn't feel enough to eat one, and I ate three in a row. If I didn't have other schedules, I would like to sit down for lunch.

Yongxing Square has a maximum of 200,000 tourists a day. In addition to the popularity of the "Internet celebrity check-in place", which remains undiminished, there is a long line in front of Zichang's pancake door almost every day. It can be said to be the most popular gourmet restaurant. The boss introduced that his family sold 30,000 to 40,000 pancakes a day, which stunned people.

Xi'an is a paradise for food. In Yongxingfang, you can eat special banquets such as famous snacks and special sets from all over Shaanxi, Wei Zheng's family banquets, Guanzhong folk mat noodles, and Shaanxi intangible cultural heritage banquets. As long as your stomach can hold it, you can soak in it and eat it for a few days without repeating it.

China is so big, and I have always wondered why Xi'an became the ancient capital of the thirteen dynasties. When I came to Xi'an, I always felt that it was closely related to the food of Greater Xi'an.

There are too many delicacies in Yongxing Square, which can be divided into Guanzhong cuisine and southern Shaanxi cuisine. Among them, Guanzhong delicacies include: biang biang noodles, Qishan noodles, Laotongguan roujiamo, Chengcheng mutton soaked, spring sprouted gourd head steamed buns, white water nine pot, Qinzhen rice skin, Xi'an rice cake, Qishan rolled dough noodles, Liquan farmhouse tofu, Qian County pot helmet.

Southern Shaanxi cuisine: Baihuoshi Cuantang, Yang County Daxiande, Zhashui potato glutinous rice cake, Ziyang steamed basin, Chenggu hot rice noodles, Ankang steamed noodles, Hanyin kang kang steamed buns, Zhenba kang potatoes, Ningqiang walnut buns, Hanyin kang kang steamed buns, Ningqiang Thousand Hammer Crispy, Shuowan Wine, Xunyang Taiji Hand-made Noodles.

Not to mention eating, just looking at it can make people dizzy.

3. Watching a big show at the Yongxingfang "Intangible Cultural Heritage" Theater is a pleasure

After talking about food, let's talk about what to do in Yongxing Square. At the Yongxingfang Intangible Cultural Heritage Food and Culture Museum, visitors can watch the authentic national intangible cultural heritage-Hua County shadow play.

Before walking backstage, there was a burst of beating gongs and drums. Shadow play is also the most familiar rhyme to people in Jidong, Hebei. On the screen, there were several little skin-like people fighting back and forth, with a consistent and tight rhythm, sonorous and powerful, and a strong impression. When I walked backstage, I found that the person dancing with these shadow figures in front of the stage was a young man.

Hua County shadow play is the oldest Han folk art in China and even in the world. Because it is the oldest, most exquisite, most mature, most perfect, most classic and most qualified to represent the highest level of Chinese and foreign shadow play art, it is known as the "Father of Chinese Opera" and the "Father of the World Shadow Play", and is rated as a national intangible cultural heritage.

However, this shadow puppet show, which is gradually fading out of the stage, is only adhered to by some elderly people, and it is not easy to see young people learning.

There are several old people backstage who play, play, sing, and sing, all of whom are over 70 years old. They are all inheritors of intangible cultural heritage shadow puppets. They have tacit cooperation, superb singing skills, and a particularly lively performance atmosphere.

4. Watch the exciting "Huayin Lao Opera" at the "Intangible Cultural Heritage" Theater

Huayin Lao Opera originated from Huayin City, Shaanxi Province and began in the late Ming and early Qing Dynasties. Its vocal characteristics are majestic and heroic, and are known as the "earliest rock" on the loess slopes. In 2006, Huayin Laoqiang was selected into the first batch of national intangible cultural heritage lists.

On the stage, several old artists were performing "Huayin Lao Opera". The expressions of talking, singing, singing and singing were extremely exaggerated and full of motion, which made people's blood boil. Although many foreign tourists didn't understand a word they said, they were more influenced by the atmosphere on the scene. After the performance, it won many people's applause and cheers.

After saying so much, the length was not short, but I found that I only said 4 points. Compared with the dozens of intangible cultural heritage sites in Yongxing Square, hundreds of delicacies cannot be finished in a few days and nights. Last question, have you been to Yongxing Square? In your opinion, which food and performances are you most impressed?
