There are too many titles and imaginative things in Yangzhou, not to mention the "Fireworks March in Yangzhou" that we have studied since childhood. Last year, Yangzhou was named the "Capital of World Cuisine", and it is definitely worth visiting again and again for foodies.

When I went to Yangzhou, it was the season of "putting on autumn fat" in October, and I also lived a slow life of Yangzhou people's "food is paramount" according to local customs. Yangzhou cuisine originated over 2000 years ago during the Spring and Autumn Period. After the opening of the Grand Canal in China, Yangzhou cuisine played an important role in promoting economic and cultural exchanges between the north and south.

With a profound culinary culture spanning two thousand years, a fresh and peaceful diet that values health, and an impressive influence that impresses the taste buds, Yangzhou has been awarded the title of World Capital of Cuisine by UNESCO, following Chengdu, Macau, and Shunde.

If you haven't been to Yangzhou yet and haven't experienced its local food culture, then follow Xiaoyu to "eat Yangzhou" together! Morning must be "skin water", Jinchun morning tea is indispensable; If you entertain guests and friends, having a high-end 'Yangzhou banquet' is definitely stylish. Jinchun "is a popular morning tea restaurant among locals. It is a salt merchant's private garden in Yangzhou and was visited by Emperor Qianlong during his southern tour. Just after 7 o'clock in the morning, it was already crowded with customers waiting in line. So if you want to come to Jinchun for morning tea, you must make a reservation.

There is a famous "Three Provinces Tea" in his home, which is made by mixing Zhulan from Jiangsu, Longjing from Zhejiang, and Yanzhen from Anhui. Taking a sip immediately makes you feel refreshed, and then you feel sweet and pleasant again. It is said that in a private room of the restaurant, there are also the four characters "Jin Chun Three Provinces" written by Emperor Qianlong.

Hot dried shredded pork: This is the most distinctive dish in his family, with distinct roots. The pure tofu and the fragrance of shredded chicken blend seamlessly together. In spring, seafood adds flavor, in summer, crispy eel shreds are refreshing, in autumn, crab roe adds color, and in winter, wild vegetables add fragrance. It changes with each season.

Crab roe soup dumplings: Special attention should be paid to the way of eating. It is necessary to gently lift, slowly move, open the window first, and then drink the soup. The correct way to open the crab roe soup dumplings is to walk in four steps.

San Ding Bao: Made from diced chicken, diced meat, and diced bamboo shoots, these three "Ding" are mixed in one bite to create a wonderful feeling in the mouth. Combined with thin and soft skin, it makes people take one bite after another, reluctant to stop.

Wensi Tofu Soup: This is a dish that particularly tests knife skills. Tofu needs to be cut into hair like thin pieces, which cannot be done without years of practice.

"Fresh, neutral, fashionable and healthy" is the concept of "Yangzhou banquet", which is also the feature of Huaiyang Cuisine that makes Yangzhou a "city of food".


The Yangzhou banquet we went to is located in the beautiful Songjiacheng Sports Park. The restaurant is decorated with antique style and is well-known but not exaggerated, representing the gentle culture of Yangzhou. When we went there, it was a misty autumn day, and people were so busy enjoying and eating that they forgot to take photos of the restaurant environment. Let's take a look at Huaiyang Cuisine cuisine from the menu on the table!

The most appealing dish to me in the Songcheng Jinxiu flavor dish is the seasonal dish 'Ripe Drunken Crab'. Now is the time of "autumn wind rushing and crab feet itching". Although I can taste many crabs in Shanghai, the cooked and drunk crabs at Yangzhou banquet are not big in size, but yellow, fat and thick in flesh. Steaming crabs until cooked, then getting drunk, and eating them will leave a long-lasting aftertaste.

Unlike ordinary crystal shrimp, Yangzhou banquet is called "Ginger Onion Sweet Bean Crystal Shrimp". After stir frying sweet beans and ginger onions with shrimp, the shrimp also leaves a hint of sweetness, making it truly unique to eat.

When I was looking at the menu, I couldn't figure out what dish "Huaiyang Yipin Stir fried Soft Dumplings" was, and only when I came up did I realize it was eels! This dish is the most famous one in Huaiyang Cuisine cuisine. It is said that it is called "soft pocket" because when using chopsticks to pick up eel meat, the two ends hang down like the straps of the belly pocket worn by ancient people.

I also like to eat his' Chicken Fir Mushroom Gaoyou Lake Duck 'at home. The chef cooked me just right, blending the aroma of chicken Fir Mushroom completely into the fresh and delicious Gaoyou Lake duck meat. It tastes both wild and delicious, fantastic.

There are already too many articles about Yangzhou banquets, and each dish can express a unique feeling; I just want to talk about his "Huangqiao Shaobing (Baked cake in griddle)" finally. Although I had eaten a lot of food before, and I didn't eat much of the staple food, I actually liked Huangqiao Shaobing (Baked cake in griddle). As soon as the hot and crisp Shaobing (Baked cake in griddle) was served, it smelled an attractive fragrance from afar. I just wanted to have a bite to taste it, but who knew that the crisp flavor could not be put down after reaching the taste buds through the tip of the tongue.
