I made a temporary decision to go to Yangzhou on Christmas Eve. Prior to this, all my impressions of Yangzhou, except for Li Bai's words,"Fireworks fall under Yangzhou in March", were left with a bowl of clear and oily Yangzhou fried rice. When I was in Chongqing, a friend from Yangzhou invited me to play and said that he would take me to eat Yangzhou cuisine all over the streets.
To be honest, there is no emotion in my heart, no expectation or longing. After all, I was born in Chongqing, and I have never seen any spicy, delicious and fragrant food. I can't believe that there are any delicious food in the world that can be as good as Chongqing's hot pot Jianghu dishes ~
If you didn't come to Yangzhou, you wouldn't know that Huaiyang cuisine was one of the four major cuisines, or that Yangzhou was once a place where you could rival the country. My first impression of Yangzhou was that it was gentle and dignified, slow and leisurely, and the pace of life was calm. On the way to Changle Inn by car, I didn't see any high-rise buildings. There were only low-rise houses standing on the street. I thought to myself that Yangzhou in the plains is a vast land and sparsely populated!
Changle Inn is next to Geyuan. Walking in the alley, the blue bricks and black tiles of the Hui-style buildings themselves are like an ink painting. The alleys of Shanghai and the alleys of Yangzhou really carry the flavor of time! When people are in it, they become gentle without realizing it ~
Yangzhou is a garden city. This interesting trip seems to be walking through mountains, rivers and gardens every day, as is the inn where we stay! Chen sir also said with a smile that people with a poor sense of direction may get lost in the inn.
Although rainy days are not suitable for traveling, they can amplify the beauty of a garden city. The sky is green, the rain and fog are vast, and the night is hazy. Looking at flowers and trees is another kind of appearance. Yangzhou has a magic power that can make impetuous people quiet and soothe the rushing heart.
Yangzhou Three Dao Culture
It is said that the life of Yangzhou people is "wrapped in water in the morning and wrapped in water at night." The wrapped in water refers to the morning tea culture, and the wrapped in water refers to the culture of soaking feet and bathing at night. Leisure and slow life is probably comfortable from morning to night! The three knives refer to barber knife, pedicure knife and kitchen knife respectively. Among them, kitchen knives are the most famous, giving rise to Huaiyang famous dishes ~
There is also a Huaiyang Cuisine Master Studio near Quyuan, where you can watch the masters cook on site. The cutting skills of slicing shredded tofu are really amazing. The Yangzhou fried rice, which takes three minutes, smells delicious. Behind Huaiyang cuisine is more supported by the spirit of craftsmanship. Making the food more exquisite and delicious is the tireless pursuit of these inheritors.
Quyuan Tea House has morning tea
Regarding morning tea, Chongqing people like me who have always eaten noodles actually don't have much idea! So when I first arrived in Yangzhou, I was arranged to have morning tea ~ In my opinion, morning tea is no different from breakfast. The difference is that the word morning tea seems more comfortable and leisurely than breakfast. The scenery of Quyuan is good. Sitting in the private room, you can see the garden landscape outside through the window.
Morning tea can be eaten casually, or it can become ritualistic. In order to fully experience Yangzhou's morning tea culture, we chose a private room and tasted all the favorite breakfast items of Yangzhou people ~ Yangchun noodles, dried chicken soup shredded, crab yellow soup buns, emerald steamed wheat buns, and fine sand steamed buns...
I have to say that there are many things to eat at morning tea. But no matter how much soup noodles you eat, you can't forget to order a "Kui Dragon Ball". This is a special formula for tea selection and scenting developed by Yangzhou people. It has the flavor of Longjing, the aroma of pearl orchids and the color of Kui needle. The color is strong, delicious and resistant to foaming. It does not lose color even if it is flushed four times. Since this tea comes from three provinces, it is also called "Kuilongzhu" as "Three Provinces Tea".
"Kuidragon Pearl" is made from Zhejiang Longjing, Anhui Kuineedle, and Yangzhou Zhulan. It is brewed with Yangtze River water and blends famous teas from Jiangsu, Zhejiang and Anhui into one pot. The brown color is clear and fragrant. It is soft and thirst-quenching and greasy. The first tea has a fragrant aroma of pearl orchids; the second tea has a strong flavor of Longjing; the color of the long tea is undiminished, so tea lovers must taste a cup carefully ~
7 Eat 8 Bar Sunshine Restaurant
This restaurant is on the first floor of Hongqiafang Hotel, facing Slender West Lake across the bridge! The name "7 and eat 8" is not easy to remember at first glance, but if the homophonic sound becomes "go eat cake", will it be quite new to remember the name at once, but the decoration of the restaurant still adheres to the Chinese classical beauty.
At this restaurant at lunch, a table ordered a lot of dishes. I have to admit that Huaiyang cuisine has a wide variety of varieties, elegant taste, and is suitable for all ages. Here I would recommend some dishes that I personally prefer!
Salted old goose is a home-cooked dish among Yangzhou people and one of the representatives of Huaiyang cuisine. The salted goose does not use much seasoning and tastes slightly salty. The goose meat is tender and tender and has a unique flavor. The goose feet are the most expensive part sold daily by the pound ~
Pepper Fragrant Hair Knife This is a favorite home-cooked dish for Yangzhou fishermen. The big fish obtained by fishermen will be sold in the market, and the small fish will be pickled and eaten for themselves. As time goes by, there are many ways to make swordfish, and its crispy taste is very exciting.
The radish on the Yanghua Radish really amazes me. This is the first time I have seen a yellow and green fruit radish in my life. This plate of cherries sized poplar radishes is a cold salad. It is sour and sweet and has some anti-greasy effect ~
Grilled opium fish with green onions is one of the main dishes in the store. The meat of the opium fish is very tender and smooth without any greasy feeling. The fish itself has no thorns, making it convenient and worry-free to eat. My favorite is the fish skin part, which has endless aftertaste!
In addition, the taste of drunken crabs, stewed oxtail with mushrooms, fried rice cakes with shepherd's purse, steamed salty rice cakes in cages, braised four treasures in Huaiyang, stewed radish with shrimp seeds, and roasted clams with pepper are also not bad!
Overall, 7 Eat 8 Bar is a very suitable place for foreigners to eat. It has both local famous dishes and fusion dishes, and you can also take a look at Slender West Lake!
Dachaohuai: New Huaiyang Integrated Cuisine Restaurant
Chao Chao Huai "belongs to the new style of Huaiyang cuisine. It is a fusion restaurant based on traditional Huaiyang cuisine and combines the tastes of the new era. The decoration here is a bit of a forest style, and there is also a loriot called Fortune in the store!
In addition to Huaiyang cuisine, you can also eat grilled fish, barbecue, and Sichuan cuisine in Dacaohuai. You can not only taste fresh Huaiyang cuisine but also meet the different taste needs of foreign tourists.
Its three signature dishes are: roasted durian, Bawang hand-shredded sauce bones, and beef brisket in wooden barrel fish soup
The top ten recommended must-order items are sizzling plate veal steak, wooden basin prawns, mutton kebabs, Italian barbecue rolls, ginkgo shrimp balls fried lotus root, charcoal roast pork brain, jumping cheese, osmanthus crispy rice cake, open stove crab powder chicken soup dried shredded, legend of bullfrog ~
I personally think that the government five-spice smoked fish, Chaochao Huaihua carved drunk crab, Yunying lotus root slices, small yellow rice boiled fat beef card, Carmen rice steamed sausage, and Chaochao Huaiwubao health soup are also quite unique ~
If friends from other places are not used to the light taste of traditional Huaiyang cuisine, they might as well try Dachaohuai. It has the characteristics of Huaiyang cuisine and also takes into account the tastes of foreigners. It has all five flavors, spicy, fresh, fragrant and salty.
Zhongshunhe Huaiyang Cuisine Traditional Restaurant
Zhongshunhe is a mid-to-high-end restaurant here, with a Chinese decoration style and an atmosphere of classical style. What's more important is the taste of the food. Every dish has an online face value and is gratifying to the entrance. Focus on the following dishes that impressed me deeply!
Yangzhou fried rice: The birthplace of egg fried rice. The Yangzhou fried rice here has a feeling of drawing. The rice grains are distinct, soft and soft, full of luster, and fragrant and chewy.
Jade chicken slices, this dish is misleading both in terms of appearance and taste. It looks like tofu but tastes like fish. In fact, it is a fairy combination of chicken breast meat and egg white. It adopts a very traditional method and has very high requirements on heat and oil temperature ~
Delicious raw and stir-fried shrimp. This dish is made from live shrimp, and the shrimp served can move. I don't think I'll forget this fried shrimp in my life if I take a bite. The taste is extremely tender and tender, and it's simply wonderful ~
Huaiyang Ancient Ding Lion's Head. Lion's Head is the main dish in the north. Choose fat and lean pork mixed with chopped green onion and coriander. Eating one will feel extremely delicious, but eating another will make you a little tired!
Others such as crystal meat, Yangzhou salted goose, yogurt organic purple sweet potato, Wensi tofu with jade roast meat, meringue tomato sauce beef brisket cup, black bamboo charcoal dumplings, osmanthus peach oil with turtle jelly are also good. You can try it all when you come ~
To sum up, there is only one sentence: Huaiyang cuisine, as one of the four traditional Chinese cuisines, is well deserved.
Huaishixishilou
The last meal on Yangzhou's exciting tour was the higher-specification Huaishi Xishi Building (Wanda Store). I heard that this store cost 30 million yuan in decoration alone. The kitchen alone is 1500 square meters. Its wall decoration and lighting layout are all created with ingenuity ~
Lion's head is a must-order. The braised green vegetable Lion's head in Xishi Lou is well-known in Yangzhou. The proportion of lean meat and fat meat is even. It is smooth and not greasy in the mouth. It is indeed worthy of Huaiyang's famous dishes ~
Fish head meatballs in casserole. Fish head soup is very delicious. Add some coriander and shallot. Drink a bowl in the middle of winter. It is warm and comfortable.
Crab powder and chicken head rice fried rice is the only staple food that can compete with Yangzhou fried rice in my opinion! The rice poured with vegetable juice and mixed with the chicken head rice would seem to be peas at first glance. The fried rice has the aroma of seafood and the taste is particularly good ~
Others such as traditional braised red crispy chicken, secret sausage oatmeal, thick soup Huaiyang boiled dried shredded, stone pot beef tendon steak potato, julishi jade saute emperor, Taihu white shrimp fried with green onions, handmade shepherd's purse large rice balls, dry stir-fried self-black bean sprouts, taste still very good ~
In addition to these famous Huaiyang cuisine restaurants, I also checked in two local coffee shops with very special characteristics, and I would like to mention it by the way!
Dingjiawan Shiqing Mountain Room
A friend said,"The alleys of Shanghai are the alleys of Yangzhou." The winding and narrow streets and alleys are the flavor of the old Yangzhou city, and Dingjiawan in the south city is the most well-preserved ancient streets and alleys in Yangzhou city. Dingjiawan is close to Heyuan. It is an old street in the downtown area. The old houses inside are all in the style of blue bricks and black tiles. People walking in it feel like they have traveled through ancient and modern times.
There is a coffee shop called "Shiqing Shanfang" here. The owner is a beautiful woman who studied landscape design and also likes illustrations and tea ceremony on weekdays. Xiaochuan Tan learned that she had purchased a residential house here and personally designed and renovated such a pleasant place. She could order a cup of coffee or make a pot of good tea!
The special coffee here may not be available anywhere else, and it tastes a little bitter, but it is especially delicious when paired with Yunnan pound cake ~
Kung Fu tea is delicious, white peony and cinnamon are both good. White peonies can be served with Japanese snacks roasted apples and fruits; cinnamon ones can be served with Chinese snacks lotus cakes and walnut cakes.
Riverside sky city store
Riverside sky city recommended by friends! This is an Internet celebrity store recommended to me by a local friend in Yangzhou. We went to the Sky City Store in Xingyao Tiandi for afternoon tea. This store is hidden in an office building and has a good environment. Riverside Coffee perfectly integrates musical performances, Western food, afternoon tea, and cocktails!
We ordered papaya prawn salad, fruit salad, finger sandwich, stuffed shrimp balls, Spanish seafood stewed Italian rice, Australian Angus filet steak. It looked good and the taste didn't disappoint me.
The flavor of its personalized cocktails and master cocktails is incomparable to the concoctions I drank before! Yayoi Kusama's gift is truly unforgettable ~
Another thing I want to say is that the little brother who mixes wine and sings is very stylish! I don't know what your Yangzhou locals think about Riverside Coffee ~
Yangzhou to me is like a dignified lady from a big family, hiding too many beauties that I don't know about! This journey to taste is like turning a page in a book and reading a preface. Its extensive and profound food culture is beyond the understanding of a layman. However, Yangzhou's picturesque scenery and garden beauty were not even seen. This is a pity!
To be honest, during 3 days and 2 nights in Yangzhou, Huaiyang cuisine was served every meal, and I really missed the taste of hot pot noodles! However, I still don't forget to affirm the power of Huaiyang cuisine, its elegant taste, its authenticity, its inclusiveness, and it is suitable for all ages. This is indeed a place that Sichuan cuisine cannot compete with. Yangzhou, fireworks in March, we will see you again
