Delicacy is the characteristic of Yangzhou morning tea, such as the most classic hot dried shredded silk. From the perspective of material, this dish is just an ordinary bean product. I think it won't cost much, right? But precisely this test is the chef's cutting skills. The thinner the cut, the better. Without three to five years of foundation, you may not necessarily be excellent.

The big crab roe soup dumplings are must-ordered at every table. Many tourists will take a straw when eating such a big steamed bun. And I learned the correct way to eat it. I had to bite open the top first, and then I could absorb all the filling in one go. My friends all followed suit one after another, and the "sizzling ~" in the private room could be heard endlessly.
I also ate a bowl of seemingly ordinary Yangchun noodles. The smooth and delicious aroma really couldn't be seen through my eyes. I couldn't help but drink the last drop of soup, leaving a layer of black dots on the bottom of the bowl. So these were shrimp seeds! No wonder it is so fresh. It should be particularly nutritious.

We ate until past 10 a.m., and this time there were still tourists lining up at Quyuan Tea House. We heard that all tables were lined up outside No. 100. It is not an exaggeration to say that Yangzhou morning tea can be eaten until noon! Moreover, Quyuan Tea House not only provides morning tea, but also provides two dinners in the afternoon and evening. We also had our first dinner here on our first day here.
There were too many dishes, so I picked four that impressed me. The first one is iced crayfish. It is not as simple and crude as those crayfish such as garlic paste and thirteen spices on the market, but is secretly made with Huadiao wine. The second is crab roe lion head, which has been eaten in many places. There is also Wensi tofu soup. The cutting skills of this dish are obviously to the extreme. It began in the Qing Dynasty and has a history of more than 300 years. It is said that Emperor Qianlong once tasted this dish and once became a famous dish in the Qing Dynasty. Because it was created by a monk named Wensi, it is called "Wensi tofu" and has been passed down to this day. Personally, I feel that it tastes particularly delicious when paired with the sesame cakes provided in the restaurant.
A must-visit in Yangzhou-Slender West Lake
"There are thirty-six West Lakes in the world, but only Yangzhou West Lake is thin." If you open the Baidu map and search for the place name of West Lake, you can find dozens, not to mention hundreds. If Hangzhou's West Lake is the most famous one, then Yangzhou's Slender West Lake can definitely rank second. However, the connotation and attractions here may be unmatched by West Lake in the world.
From ancient times to the present, there are also many poems praising Slender West Lake. My favorite is the former Qiantang poet, Wang Hang of today's Hangzhou. He came to Yangzhou in admiration of his fame and admired the beautiful scenery of Slender West Lake. After comparing it with the West Lake in his hometown, he wrote a poem: "The weeping poplar continues to receive the remnants, and the geese 'teeth are drawing on the Hongqiao Bridge. It is also a pot of gold, so it should be called Slender West Lake."
